We make each knife from SF100, a high-carbon stainless steel from Sheffield, celebrated for centuries as the home of cutlery. SF100, traditionally reserved for razor blades, is strong, durable and corrosion resistant. While Japanese knives may dazzle with their sharpness, their higher-carbon steel makes them more brittle and delicate. In contrast, SF100 offers an edge that stands the test of time, tailored to the everyday demands of European-style chef’s knives and easy to care for. Each blade is rigorously tested to achieve a hardness rating of 60 on the Rockwell C Scale, guaranteeing lasting performance in your kitchen.
